On my quest to eat a little healthier and eat more vegetables, I made up a batch of cauliflower rice to have instead of normal rice.  I froze it in little portion sized containers, enough for one serving, so on nights we want to serve our meal with rice, I can simply defrost one of these to have.

It has the same texture as rice, and the whole family has even become to like it over normal rice.

This is amazing with our bombay curry!

Ingredients

  • 500 g cauliflower - florets only

Instructions

Thermal Cooking Method

  1. Break cauliflower florets into manageable chunks and place into the mixing jug.
  2. Blitz for approx. 4 or 5 seconds/reverse/speed 5. By “whacking” instead of “chopping” it retains the texture of rice but be careful not to over-chop or you'll end up with pureed cauliflower.
  3. Freeze raw. To cook add to a frying pan over medium heat and cook partially through, leaving some crunch.

Traditional Cooking Method

  1. Break cauliflower florets into manageable chunks and place into a blender
  2. Pulse the blender until the cauliflower resembles the texture of rice. Be careful not to over-chop or you'll end up with pureed cauliflower.
  3. Freeze raw. To cook add to a frying pan over medium heat and cook partially through, leaving some crunch.
