We have used this basic icing recipe on nearly all our cakes, biscuits, and slices. It is so versatile and easy to make that we are sure it’s going to be your go-to-icing recipe as well.
Chocolate Icing
Leave out 20 g icing sugar and replace with 20 g raw cacao.
Citrus Icing
Use 2 tbsp. lemon or orange juice instead of milk or water.
Jaffa Icing
Leave out 20 g icing sugar and replace with 20 g raw cacao and add 2 tbsp orange juice instead of milk or water.
Vanilla Icing
Add 1 tsp. vanilla bean paste.
If you would like to colour your icing, be sure to use all-natural food colours.

- 20 g butter
- 2 tbsp. milk

Thermal Cooking Method
- Place everything into mixing jug and mix for 10 seconds/speed 4 until well combined. Scrape and repeat if needed.
Traditional Cooking Method
- Place all ingredients into a bowl and mix until well combined.

My son has a dairy/soy allergy. Could I replace cows milk with almond milk & butter with nuttlex for a similar result?
Yes I think that would be fine. Coconut milk works as well :)

No, we use an organic icing sugar.
Thanks for the recipe. I’m icing the cake today, but for a birthday tmrw. Once it’s iced, is it best kept in or out of the fridge ?
I prefer to keep it out of the fridge otherwise it can form condensation on the icing :)

I would class it a thick icing – to make it runny just add more liquid :)
Hai can you please help me if I would like to make a red icing for my cake. Instead of using colouring I’m thinking to extract the colour from strawberries. Would it work?
You could definitely give it a try. I think it will make it more of a pink colour than red.
If you don’t have any icing sugar on hand, simply put regular sugar (or UK ‘castor sugar’) into a spice or coffee grinder and 10 seconds later – you have icing sugar!!

Hmmm have not heard of this before. The icing does set solid, so it may break up when slicing it. A good trick is to heat your knife up first under some hot water so it slices through easier.
