Ingredients
- 1 rashers nitrate-free bacon
- 1/2 c pink or sea salt
Instructions
Thermal Cooking Method
- In a frying pan over medium-high heat, cook bacon until just under crisp. Allow to cool then place in a dehydrator at 60°C for 6 - 8 hours or until completely dehydrated (this may take longer depending on the thickness of the bacon).
- Allow to cool, then place dehydrated bacon in a thermal mixing jug and blitz for approx 30 seconds/speed 8 until fine in texture.
- Add salt and mix for approx 10 seconds/speed 2 until well combined.
Traditional Cooking Method
- In a frying pan over medium-high heat, cook bacon until just under crisp. Allow to cool then place in a dehydrator at 60°C for 6 - 8 hours or until completely dehydrated (this may take longer depending on the thickness of the bacon).
- Place dehydrated bacon in a food processor and blitz on high until fine texture.
- Add salt and mix on low speed until well combined.
