This apple and cinnamon yoghurt cake is soft and delicious, it is best served as a dessert with cream or even a scoop of ice cream! A tip when making, make sure the butter is soft and it’ll mix a lot easier. The apple gives it a lovely sweetness and the cinnamon sugar on top makes it absolutely glorious.

Ingredients
- 130 g white sugar
- 120 g butter
- 200 g vanilla or natural yoghurt
- 2 tsp. vanilla bean paste
- 40 g almond meal
- 370 g self-raising flour
- 3 large egg
- 2 green apple
Topping
- 2 tbsp. brown or rapadura sugar
- 1 tsp. ground cinnamon
Instructions
Thermal Cooking Method
- Preheat oven to 180°C and line a round cake tin with baking paper.
- Beat sugar and butter together until pale and creamy. 10 seconds/speed 4. Scrape and repeat until complete.
- Add yoghurt and vanilla bean paste and mix for 10 seconds/speed 4. Scrape down sides.
- Add almond meal and flour and mix for 10 seconds/speed 4.
- Mixing on speed 3, add eggs one at a time through the hole in the lid, this will take about 40 seconds as you want to beat between each egg.
- Using a spatula, pour half of the mixture into the prepared cake tin.
- Add the diced apple pieces evenly over the surface then pour the rest of the cake mixture over the apples and sprinkle the top with the sugar/cinnamon mix.
- Bake in the oven for 45 minutes or until a skewer comes out clean. Serve warm or cold with fresh yoghgurt or ice cream.
Traditional Cooking Method

- In a large bowl, beat sugar and butter together until pale and creamy (electric beaters will make this easier).
- Add yoghurt and vanilla bean paste and mix with beaters until incorporated well.
- Add almond meal and flour and mix until incorporated.
- Turn down beaters to low speed and add eggs one at a time incorporating them well between eggs.
- Using a spatula, pour half of the mixture into the prepared cake tin.
- Add the diced apple pieces evenly over the surface then pour the rest of the cake mixture over the apples and sprinkle the top with your sugar/cinnamon mix.
- Bake in the oven for 45 minutes or until a skewer comes out clean. Serve warm or cold with fresh yoghgurt or ice cream.
