There’s this place on the Gold Coast and they sell the most delicious acai bowls.  We treat ourselves to one most Sunday’s after nippers and I just knew I had to come up with my own recipe.

It’s taken many, many attempts…  I’ve made ones too sweet, too bitter, too runny, too hard, too icy etc but I love a good challenge so pushed through and I’ve finally come up with what I (and my husband) think is the best Acai bowl ever!

Ingredients

  • 1 tbsp. chia seeds
  • 100 g cold water
  • 2 tbsp. 100% natural peanut butter or cashew nut butter
  • 2 tsp. Acai powder (link above)
  • 300 g frozen mixed berries
  • 100 g frozen pineapple
  • A handful of granola
  • Cut fruit for the top - banana, goji berries, grapes, strawberries, blueberries are all delicious

Instructions

Thermal Cooking Method

  1. Add chia seeds and water into your mixing jug. Blitz this for 10 secs/speed 9.
  2. Scrape down the sides and add your nut butter, acai powder, frozen berries and pineapple and blitz on speed 8. You may need to add a touch more water if your blades are working too hard, or the mixture is not moving around.
  3. Place about 1/4 cup of granola in the bottom of your serving bowls. Top with half of the Acai mixture (this serves 2) and then top with more granola and fruit of choice. It is also nice with a drizzle of honey over the top.

Traditional Cooking Method
