After many failed attempts… I (and my husband) think I’ve come up with the best Acai bowl ever!
It’s quite hard to get the perfect Acai, you don’t want them too sweet, too icy, too runny etc. They have to be just right…
You will need a high-speed blender for this recipe.

Ingredients
- 1 tbsp. chia seeds
- 100 g cold water
- 2 tbsp. peanut butter or cashew nut butter
- 2 tsp. acai powder
- 300 g frozen mixed berries
- 100 g frozen pineapple
- 1 handful of granola of choice
- cut fruit for topping of acai bowl
Instructions
Thermal Cooking Method
- Add chia seeds and water into your mixing jug. Blitz this for 10 seconds/speed 9. Scrape down the sides.
- Add nut butter, acai powder, frozen berries, pineapple, and blitz for 20 seconds/speed 9. Add a touch more water if the blades are working too hard, or the mixture is not moving around. Scrape down the sides and repeat until smooth.
- Place about 1/4 cup of granola in the bottom of the serving bowls. Top with half of the acai mixture and then top with more granola and fruit of choice. It is also nice with a drizzle of honey over the top.
Traditional Cooking Method
- Add chia seeds and water into a blender or food processor. Blitz this for 10 seconds on high speed.
- Scrape down the sides and nut butter, acai powder, frozen berries, pineapple, and blitz on high speed until desired consistency. Add a touch more water if the blades are working too hard or the mixture is not moving around.

You could substitute the nut butter with a coconut butter or a frozen banana and use a nut-free granola which has oats, sunflower and pepita seeds.
