Oh geez, confession time – I was recipe testing these, you know, to get a nice photo and make sure they were as good as I dreamt them to be… well, let me confess, these were so good we ate the whole lot as soon as this picture was taken, there were three of us (Tracey, her husband, and the photographer), oopsie! We scoffed them down and they were amazing – just what I wanted them to be!

Ingredients
- 500 g fresh scallop
- 100 g butter
- 2 garlic clove
- 1/2 tsp. salt
- 1/2 tsp. ground pepper
- 2 lemon
Instructions
- These are very fast cooking, so have everything ready to go before you start.
- Under running water, wash and clean all the scallops. Drain well and set aside.
- In a large frying pan, over a medium-high heat, add half the butter and garlic and cook for 2 minutes.
- Add the rest of the butter to the pan and allow it to melt, then bring to a simmer. Don't let it get too hot and burn, turn heat down if needed.
- Add scallops, salt, and pepper to the pan and cook for 5 minutes, turning frequently. If they are large scallops, they may need a little longer.
- Add freshly squeezed lemon juice and stir through.
- Cook for 1-2 minutes and then serve immediately.
