Ingredients
- 1 brown onion
- 6 sheets puff pastry
- 1 apple
- 2 carrot
- 1 zucchini
- 1 1/2 c breadcrumbs
- 1 tbsp. tomato sauce
- 1 egg
- 1 tsp. cayenne pepper (or to taste)
- 1/4 tsp. cracked pepper (or to taste)
- 1/2 tsp. salt (or to taste)
- 1 packet sausage mince or 500g pork & veal mince
- 5 g olive oil
- 1 garlic clove
- chia seeds to sprinkle on top of sausage rolls
Instructions
Thermal Cooking Method
- Preheat oven to 190ºC. Blitz onion and garlic 3 seconds/speed 7. Scrape and repeat. Cook 3 minutes/100ºC/speed 3 in olive oil.
- Add veggies into mixing jug and chop 5 seconds/speed 6.
- Add mince along with everything else and mix 10 seconds/speed 4/reverse. You may need to use the spatula to push the mixture down while mixing.
- Cut sheets of pastry in half. Then place the mixture down the centre of each half. Roll into sausage roll shapes. Use a small amount of milk to help the pastry stick together. Baste top with a little milk or egg wash and sprinkle with chia seeds.
- Line a baking tray and cook for approx. 15-20 minutes until golden.
Traditional Cooking Method
- Preheat oven to 190ºC. Mince garlic and finely dice onion and saute in olive oil until translucent, then place into mixing bowl.
- Finely dice or grate veggies and add to mixing bowl with garlic and onion.
- Add mince to mixing bowl and mix all ingredients until well combined. You may need to use your hands for this.
- Cut sheets of pastry in half. Then place the mixture down the centre of each half. Roll into sausage roll shapes. Use a small amount of milk to help pastry to stick together. Baste top with a little milk or egg wash and sprinkle with chia seeds.
- Line a baking tray and cook for approx. 15-20 minutes until golden.

General sausage mince??? Is not additive free
Totally agree that general supermarket sausage mince is not normally additive free, but if you go to a butcher that sells additive free sausages, they will often sell sausage mince, or squish out the insides of additive-free sausages and use that :)
These were so easy to make. They were that simple I ended up doing another batch. Placed leftovers in freezer. I used pork and veal mince. Kids loved them. This will be my go to recipe for sausage rolls from now one. They are so simple and easy to make, why would you buy store packaged ones. Definately recommend this recipe and I can guarantee you wont buy packaged ones again.
Do you cut the rolls up after baking? I’ve never made sausage rolls.
Slice them up into portion sizes prior to baking.
So delicious, I added 50grams oats as I had no bread crumbs & they were yum.
What puff pastry brand do you use? They seem to have additives
We use the butter puff pastry.
