I created these on a whim as I had some frozen berries I wanted to use up and had a craving for something sweet. These were so incredibly easy to make!  I shared a reel on Instagram making them, which you can watch HERE.

Tips:

  • The berries have to be frozen, otherwise they will be too soft and won’t hold together.
  • You could try substituting the almond meal for oats or simply leave it out and add more coconut (we have not tried this but just something to try if you need it to be nut free).
  • We like to use an organic dark chocolate if you can find one, as it’s more likely to be additive-free.
  • This recipe would work with frozen mixed berries as well.
  • If you can’t be bothered making it into individual bites, you could press the mix into a tin and cover in melted chocolate to make it into a slice instead.
  • You can eat these straight from the freezer or let them soften for 5-10 minutes if you prefer.

Ingredients

  • 2 c frozen raspberries
  • 2 c desiccated coconut
  • 1 c almond meal
  • 250 g block of additive-free dark chocolate

Instructions

Thermal Method

  1. Add raspberries, coconut and almond to the mixing jug and blitz for 30 seconds/speed 6 or until it's fine and has come together.
  2. Squish small handfuls of the mixture together and form into bite-sized rectangles.
  3. Place them on a tray and freeze for at least an hour to firm up.
  4. Break up the chocolate into bits and place into the mixing jug and melt for 3 minutes/60֯C/speed 1 (or until fully melted).
  5. Dip bites into chocolate to coat, then pop them back in the freezer to set.
  6. Store in the freezer for weeks, or in the fridge for 3-4 days.

Traditional Method

  1. Add raspberries, coconut and almond to a blender jug and blitz for 30 seconds/high speed or until it's fine and has come together.
  2. Squish small handfuls of the mixture together and form into bite-sized rectangles.
  3. Place them on a tray and freeze for at least an hour to firm up.
  4. Break up the chocolate and melt in a microwave safe glass bowl, stirring every 30 seconds until fully melted.
  5. Dip bites into chocolate to coat, then pop them back in the freezer to set.
  6. Store in the freezer for weeks, or in the fridge for 3-4 days.
