I had bought this massive box of tomatoes and already made our relish recipe, tomato paste, tomato sauce and easy BBQ sauce. I had also bagged up heaps into 400 g lots (which I froze to use instead of tinned tomatoes), and I still had so many more tomatoes to use up!!  I wondered what else I could make, then I realised we didn’t have a Pizza Sauce recipe yet.
I played around a little and came up with this little beauty and we loved it!

Note – if you don’t have the exact same veggies as I did for the recipe, don’t worry, just use what you have.

This mixture makes enough for approx.  5 – 6 large pizzas.

Ingredients

  • 1 brown onion
  • 2 garlic clove
  • 1 tsp. olive oil
  • 2 carrot
  • 1 zucchini
  • 1 red capsicum
  • 1 green capsicum
  • 3 broccoli florets
  • 3 cauliflower florets
  • 2 mushroom
  • 800 g tomato
  • 1 tbsp. mixed herbs
  • 1/4 tsp. salt

Instructions

Thermal Cooking Method

  1. Place onion and garlic into mixing jug and blitz for 3 seconds/speed 5.
  2. Add all other ingredients and blitz for 10 seconds/speed 5.
  3. Cook on steaming temp for 40 minutes/speed 2, MC slightly ajar. If you have a TM5 cook at temp 115°C. You want the sauce to reduce and thicken. If you think the sauce is burning, reduce the heat to 100°C and increase to speed to 3.
  4. Allow to cool and store in airtight containers or sterilized sealed glass jars in the freezer.

Traditional Cooking Method

  1. Finely dice onion and garlic, add onion and garlic along with olive oil to a large pot over medium/ high heat. Cook onion until translucent.
  2. In a food processor, add all remaining ingredients and blitz for 10 seconds/medium-high speed. You want the vegetables to be roughly chopped into small chunks
  3. Add chopped vegetables to a large pot. Cook on medium heat until vegetables reduce and thicken stirring constantly. If you think the sauce is burning, reduce the heat and continue stirring until desired texture.
  4. Allow to cool and store in airtight containers or sterilized sealed glass jars in the freezer.
