We have Jo’s husband to thank for these Mini Asian Chicken Burgers.  He came up with these and they were demolished by all the adults and kids.  These were great served with his home made bread rolls, salad and chips.

Ingredients

  • 500 g chicken mince
  • 1 pinch pepper
  • 1 carrot
  • 2 garlic clove
  • 1 tsp. ginger
  • 1 handful of mushrooms
  • 2 red chilli
  • 1/2 lime
  • 1 pinch salt
  • 1 c breadcrumbs

Instructions

Thermal cooking method

  1. Put carrot, garlic, ginger, mushrooms, chilli, juice of half the lime, salt, and pepper into the mixing jug and chop for 10 seconds/speed 7.
  2. Add chicken and breadcrumbs and mix for 5 seconds/speed 4/reverse. Tip out into a bowl and mix with a spatula if needed.
  3. Roll mixture into mini burgers and fry in some olive oil.
  4. Server with fresh bread rolls, salad, and homemade chips.

Traditional cooking method

  1. Crush garlic, grate carrot, and ginger, finely dice the mushrooms and chilli and juice half the lime.
  2. In a large bowl mix all ingredients together with your hands until well combined.
  3. Roll mixture into mini burgers and fry in some olive oil.
  4. Server with fresh bread rolls, salad, and homemade chips.
