Mac and Cheese… just the name makes me want to drool. Then you add ‘bake’ into the equation and, well, yum is simply an understatement!
This has been a recipe we have wanted to create for quite a while and we are excited to finally bring it to you without a single additive in sight – NO Annatto, NO artificial colours and NO MSG!
It is easy to make and a true family favourite.
Tip: reserve 50g of each cheese to back on top.

Ingredients
- 1/2 brown onion
- 50 g butter
- 500 g macaroni pasta (gluten-free works well)
- 1 garlic clove
- 650 g milk
- 200 g freshly grated cheese
- 100 g freshly grated parmesan cheese
- 70 g plain flour (gluten-free works well)
- paprika for sprinkling on top
Instructions
Thermal Cooking Method
- Preheat oven to 180ºC.
- Blitz onion and garlic for 3 seconds/speed 6. Add butter and cook for 2 minutes/100ºC/speed 1.
- Add all remaining ingredients, except the reserved cheese for baking on top, to your thermal mixing jug and cook for 7 minutes/90ºC/speed 4.
- Cook the pasta according to the packet instructions.
- Drain the pasta once cooked and mix everything in a baking dish.
- Sprinkle reserved cheese over the top of the pasta, paprika over the top of the cheese, and bake in oven for approx. 20 minutes or until golden and melted on top.
Traditional Cooking Method
- Finely chop onion and garlic. Add this, along with butter, to a large pot. Cook over a medium/high temp until the onion is translucent.
- In a small jug, mix the milk and flour together, removing all lumps. Then pour this into the pot and stir well. Add both the cheeses, except the reserved cheese for baking on top, stir in well. Turn down the heat to a simmer, stirring often, until the sauce thickens.
- Cook the pasta according to packet instructions at the same time.
- Drain the pasta once cooked. Once the sauce is cooked, mix everything in a baking dish.
- Sprinkle reserved cheese over the top of the pasta, paprika over the top of the cheese, and bake in oven for approx. 20 minutes or until golden and melted on top.
