Make a big batch of these on the weekend, reheat in the frying pan and you’re good to go for breakfasts throughout the week.  High protein and fibre first thing in the morning is important and this recipe ticks those boxes!

Protein Powder Tips:

  • I like to use the Coles Wellness Road brand whey protein concentrate because it just contains “Whey Protein Concentrate (100%) (Milk)”.  Be sure to check ingredients on this regularly in case they change.
  • Otherwise, make sure to get an additive-free protein powder.  We like the doTERRA Nutrition Range of protein powder as it’s additive-free and delicious!

Notes

  • If you would like this recipe thicker, you can add 1 tablespoon of oats before blending.

Ingredients

  • 2 eggs
  • 30 g whey protein (see notes above)
  • 1 tsp. chia seeds
  • 5 g psyllium husk
  • 1 tsp. milk of choice
  • 1/2 tsp. vanilla bean paste
  • Butter for frying

Instructions

  1. Add everything to a blender and blitz on high until smooth.
  2. Heat some butter in a frying pan over medium heat.
  3. Once the butter is melted, pour the batter into frying pan.
  4. Cook on each side until golden.
  5. Serve topped with yoghurt, berries and 100% pure maple syrup.
