Fish is definitely a favourite food here in the land of Oz, with flathead being one of our favourites. We love going to catch our own, but if you can’t catch your own, just grab some from a great fishmonger.
We love this served with sweet potato fries. These are our favourite!

Ingredients
- 3 sweet potato
- 100 g butter
- 2 garlic clove
- 1/2 tsp. salt
- pinch black pepper
- 12 flathead fillets
- freshly squeezed lemon juice
- 2 tbsp. olive oil
Instructions
- Peel and slice the sweet potato into 'french fries'. Place them evenly on a baking tray and spritz with some olive oil. Bake in a hot oven (200ºC) for approx. 30 minutes. Turn after 15 minutes.
- With 10 minutes to go on the fries, heat a large frying pan to medium-hot. Add the butter, garlic, salt and pepper and allow to sizzle. Add fish and cook for 3-4 minutes each side (depending on how big the fillets are).
- Serve with fresh lemon juice and enjoy.
