This soup is great for those cold winter days or when someone in the family is feeling unwell. It is a hearty soup guaranteed to fill you up and get you back on your feet.
The added goodness of bone broth not only adds to the flavour but is so good for your gut health.

Ingredients
- 2 chicken breast
- 1 brown onion
- 1 garlic clove
- 1 tsp. olive oil
- 2 carrot
- 1 zucchini
- pinch pepper
- 2 tsp. curry powder
- 600 g 600 g chicken bone broth
- 100 g risoni pasta (optional)
- 100 g frozen corn (and peas if you wish)
Instructions
Thermal Cooking Method
- Cut chicken breast into chunks and set aside.
- Place onion and garlic into mixing jug and chop 3 seconds/speed 7. Then cook 2 minutes/highest temp/speed 2 (with a small bit of butter).
- Roughly chop carrots and zucchini and add to jug. Chop again 2 seconds/speed 5 (I didn't peel the carrots, only chopped off the ends and cut into 4 chunks).
- Add everything else, (except corn, peas and pasta), and cook 15 minutes/highest temp/reverse speed 1. As the chicken cooks it will start to shred apart. If your chicken isn't shredded enough, then for the last 10 seconds turn up to reverse speed 4.
- After 15 minutes, add the peas, corn and pasta and cook for a further 5 minutes/100ºC/reverse speed 1. (If using a TM31 you might need to drain off some liquid into a bowl as it may be too much for your jug. Just add it back when serving).
- Once cooked serve and enjoy.
Traditional Cooking Method
- Cut chicken breast into chunks and set aside.
- Finely slice onion and garlic, cook in butter, over medium/high heat in a large pot until onion becomes translucent.
- Add finely diced carrots, zucchini and chicken and cook for 2 minutes, stirring often.
- Add water, stock, curry powder, pepper, bring to the boil. Cook for 15 minutes, stirring every now and then.
- Add peas, corn and pasta and cook for a further 5 minutes (or until pasta is at your desired texture).
- Once cooked serve and enjoy.
So simple to make. Beautiful flavour. Good to freeze, just added some extra water for reheat.

This soup is delicious and so quick to make!!!! I just whipped it up for my daughter who has just had braces put on and has a sore mouth. She still couldn’t eat it as was so I puréed it and she is now sucking it through a straw?? my poor baby. I didn’t have time to make to make my own chicken stock so used a bought one. Highly recommend it

Love this! I cheated using leftover BBQ chicken & Massel chicken stock and added diced celery & pearl barley. Lunch for the week done, delicious!!
