It was Good Friday and I had bought some prawns from the local fish monger. I wasn’t totally sure what I had planned to do with them and then remembered a dish I’d had at a restaurant many years ago which gave me the inspiration behind this dish. It is a fantastic fresh seafood dish that everyone will love.

Ingredients
Satay Sauce
- 1 garlic clove
- 2 tbsp. 100% smooth peanut butter
- 50 g coconut milk
- 2 tsp. tamari sauce
Crunchy Coconut Prawns
- 12 peeled and deveined prawns, with tails still intact
- 1/4 c cornflour
- 1/4 tsp. curry powder
- 1 egg
- 1/2 c shredded coconut
- 1 c olive oil
- salt
- mixed salad to serve
Instructions
Thermal Cooking Method
- Start by making your satay sauce.
- Place garlic into your thermal appliance jug and blitz for 3 seconds/speed 7 (scrape down sides and repeat if needed).
- Add all other ingredients and cook for 5 minutes/temp 70ºC/speed 1.
- Once done, pour this into a dish and let it cool.
- Now make your salad and plate it – you want everything ready as your prawns are best served immediately.
- Peel and de-vein your prawns if you haven't already.
- In 3 separate bowls, place cornflour and curry powder in one (mix them together), a whisked egg in another bowl, and your shredded coconut in the third bowl.
- Now coat your prawns. To do this, coat your prawn in the cornflour/curry powder mix, then place that prawn into the egg wash, then into the coconut. Repeat until all prawns are coated.
- Pour oil into a frying pan and heat this to med-hot. When you put a prawn into the oil, it should sizzle straight away. These will only take approx. 2 minutes per side to cook. If your oil is too hot your coconut will burn, but if it's too low, your prawns will just soak in the oil. You want it to sizzle.
- Once your prawns are cooked, season them with salt and plate them on top of your salad.
- Drizzle with satay sauce and enjoy!
Traditional Cooking Method
- Start by making your satay sauce.
- Crush garlic and add all satay ingredients into a frying pan and cook on medium heat for 5 minutes or until cooked through.
- Once done, pour this into a dish and let it cool.
- Continue on with steps 5 - 11 detailed in thermal cooking method above.
