These bbq’d satay chicken skewers are a great meal all year round. They are fun to make with the kids as they can thread all the food onto the skewers and feel involved in all the process. We especially love to cook ours on the BBQ as you get that lovely authentic taste, but in a frying pan will work too.
You can really play around with any marinade you like, or you could have these totally plain if you wish. But we have spruced these up with some satay sauce which we hope your whole family will enjoy.

Ingredients
- 8 skewers
- 2 chicken breast
- 4 c various veggies cut into large chunks - zucchini, carrots, mushrooms, pineapple, capsicum, onion (for the skewers)
Satay Sauce Ingredients
- 2 tbsp. crunchy or plain peanut butter
- 2 tsp. tamari
- 1 garlic clove
- 80 g coconut milk
Instructions
- Tip - soak the skewer sticks in water for two hours, that way they won't burn on the BBQ.
- Dice the chicken and marinate in the satay sauce. If you have time marinate all day.
- Heat a BBQ grill to med-hot and drizzle with some olive oil. Cook each side turning regularly.
- Mix the satay sauce ingredients together in a small bowl.
- Thread the chicken and veggies onto the skewers, in random order. Don't squish too close together as they won't cook evenly.
The kids and I made these as part of a recent cook-a-long with Eva, Jo and Tracey – not only were they easy to make but delicious to eat! The satay sauce has a really tasty flavour and was enjoyed by us all!
