We love simplicity which is why this easy one pot wonder is so amazing! It’s lunchbox friendly and freezes really well sliced and buttered. Simply pop in the lunchbox frozen and it’ll be defrosted by morning tea.
This recipe is perfect for those overripe bananas laying around.

Ingredients
- 2 overripe bananas
- 40 g golden syrup
- 50 g brown or rapadura sugar
- 2 egg
- 200 g self-raising flour (gluten-free works well)
- pinch salt
- 1/4 c rolled oats
Instructions
Thermal Cooking Method
- Preheat oven to 160°C and grease and line a loaf tin with baking paper.
- Add everything (except oats) to the mixing jug and mix for 15 seconds/speed 4.
- Pour batter into the prepared loaf tin and sprinkle with oats (optional).
- Cook for 35-40 minutes or until a skewer inserted comes out clean.
- Allow to cool in tin for 5 minutes before turning out onto a wire rack.

My new go to banana bread recipe. My daughter now makes it frequently too. She loves it toasted with butter. Delicious!

I made this today – no golden syrup so I added a mixture of honey and brown sugar. Raw was swapped out for rappadura. Turned out so well. Toasted with butter was the winning vote.
