This banana and walnut cake is a must try!  If you need to take a cake for morning tea, something that everyone will love, then this cake is for you (and everyone else to enjoy!).  It is simple to whip up and freezes well, frosting and all.

You can make this in a round or square tin, either way, it will be great.

Ingredients

Cake Mixture

  • 2 overripe bananas
  • 30 g golden syrup
  • 1 tbsp. milk
  • 160 g self-raising flour (gluten-free works well)
  • 1 egg
  • 125 g butter
  • 50 g raw sugar
  • 70 g walnuts

Frosting

  • 170 g icing sugar
  • 30 g golden syrup
  • 30 g butter
  • 2 tsp. milk

Instructions

Thermal Cooking Method

  1. Preheat oven to 160C and line a cake tin with baking paper.
  2. Place all walnuts into mixing jug and turbo for one second. Set aside.
  3. Insert whipping tool into mixing jug and add butter (best if soft) and sugar. Cream the mixture for 20 seconds/speed 4. Scrape down the sides and repeat until the mixture is pale and creamy.
  4. Add golden syrup and mix 20 seconds/speed 4.
  5. Add bananas, egg, flour and milk and mix 10 seconds/speed 4.
  6. Add 50g of walnuts and stir through using a spatula.
  7. Pour into the prepared cake tin and bake for 30-35 mins (or until a skewer inserted comes out clean). Leave to cool in tin for 5 minutes before turning out onto a wire rack to cool completely.

Frosting - Thermal Method

  1. Place all ingredients (except walnuts) into a clean mixing jug and blend together 20 seconds/speed 4. Scrape down the sides and repeat if necessary. Add more milk if needed, you are after a spreadable consistency.
  2. Spread over the cooled cake and sprinkle with leftover walnuts.

Traditional Cooking Method

  1. Preheat oven to 160C and line a cake tin with baking paper.
  2. Using a sharp knife and chopping board dice up the walnuts - set aside.
  3. Using electric beaters cream the butter (best if soft) and sugar together until it becomes pale and creamy.
  4. Add golden syrup and mix through.
  5. In a separate small bowl mash bananas with a fork. Then add mashed bananas, egg, flour and milk and stir with a spoon to combine all ingredients.
  6. Add 50g walnuts and stir to combine. Pour into the prepared cake tin and bake for 30-35 mins (or until a skewer inserted comes out clean). Leave to cool in tin for 5 minutes before turning out onto a wire rack to cool completely.

Frosting - Traditional Method

  1. Using clean electric beaters, beat all ingredients (except walnuts) until incorporated well. Scrape down the sides and add more milk if needed, you are after a spreadable consistency.
  2. Spread over the cooled cake and sprinkle with leftover walnuts.
