These Apricot Bites are a real hit with the little ones, and make the ideal healthy lunchbox snack!  You have the ability to make them into all shapes and sizes and are a great way to encourage the kids to be involved in the kitchen as they are really simple to make.

Real organic preservative-free dried apricots tend to be a darker brown colour and not the perfect bright orange that we are used to seeing in the supermarket.  The bright orange colour is due to the additive Sulphur dioxide (additive 220) that is added to them to preserve the growth of bacteria and other nasties.

Ingredients

  • 200 g dried apricot
  • 100 g desiccated coconut
  • 1/2 tsp. vanilla bean paste

Instructions

Thermal Cooking Method

  1. Add all ingredients into the mixing jug and mix for 30 seconds/speed 8 or until mixture comes together.
  2. Line a flat tray with baking paper and roll the mixture into small balls or press the entire mixture into a flat tray and refrigerate to set for approx. 1 hour.
  3. Once set cut into shapes of choice and store in an airtight container in the fridge.

Traditional Cooking Method

  1. Add all ingredients into a high-speed blender and bitz on high until the mixture forms together.
  2. Line a flat tray with baking paper and roll the mixture into small balls or press the entire mixture into a flat tray and refrigerate to set for approx. 1 hour.
  3. Once set cut into shapes of choice and store in an airtight container in the fridge.
