ANZAC (Australia New Zealand Army Corps) day commemorates the sacrifice of Australian and New Zealand military personnel who have died during war and is an annual holiday for the Australian and New Zealand people.
We are a military family with both myself and my husband serving in the Navy. We start off with the Dawn Service and then come home and make these biscuits in memory of those who will never be forgotten, and those still serving our country.

We prefer these made the traditional way, however, we have included a thermal method if you wish.

Ingredients
- 120 g butter
- 45 g golden syrup
- 1/2 tsp. bicarb soda
- 2 tbsp. boiling hot water
- 90 g oats
- 100 g raw sugar
- 50 g desiccated coconut
- 160 g plain flour
Instructions
Thermal Cooking Method
- Preheat oven to 150ºC and line two flat baking trays with baking paper.
- Melt butter and golden syrup for 2 minutes/100ºC/speed 2.
- While this is melting, boil some water. Mix boiling water and bicarb together in a small cup and pour this mix into the melted butter.
- Now add everything else and mix on 5 seconds/speed 4/reverse.
- Roll into balls, place on the baking trays and flatten slightly.
- Bake for approx. 20 minutes until golden.
Traditional Cooking Method
- Preheat your oven to 150ºC and line two flat baking trays with some baking paper.
- Melt butter and golden syrup in a pot over medium heat until melted.
- While this is melting, boil some water. Mix boiling water and bicarb together in a small cup and pour this mix into the melted butter.
- Add everything to a bowl and mix until well combined.
- Roll into balls, place on the baking trays and flatten slightly.
- Bake for approx. 20 minutes until golden.
Anzac biscuits are a fave in our place and these did not disappoint. Not just for April, make these anytime of the year.

Delish!! I’ve been searching for a great Anzac recipe as we like to bake them year round now just around Anzac day and these were great, crunchy outer but chewy in the middle-just the way we like them!
We love these Anzacs. Make them small so they fit easily in a lunch box. They freeze well too! Straight from freezer to lunch box is a huge bonus for us.
