These are just delicious for breakfast, lunch or dinner!  Who doesn’t love egg and bacon, right?!

Bacon doesn’t need to be a dirty word!  As long as you source nitrate-free bacon, which you can now get from the supermarket, then you’re all good to keep enjoying it.

These are great for kids or adult lunchboxes too!

Ingredients

  • 4 rashers of bacon
  • 50 g block cheese
  • 1 carrot
  • 1 tbsp. vital veggie powder (purchase from link above)
  • 5 eggs

Instructions

Thermal Cooking Method

  1. Preheat oven to 180°C and grease a mini muffin tin with a bit of butter and set aside.
  2. Roughly chop bacon, cheese, carrot and put in your thermie jug together with vital veggie powder and blitz 2 secs/speed 5. Scrape down sides and repeat.
  3. Add eggs and mix on 5 secs/speed 3/reverse. Mixing a bit more with your spatula if needed.
  4. Fill each muffin tray with the mixture and cook in oven for approx. 15-18 mins until cooked.

Traditional Cooking Method

  1. Preheat oven to 180°C and grease a mini muffin tin with a bit of butter and set aside.
  2. Finely dice bacon and grate cheese and carrot.
  3. Add all ingredients to a mixing bowl and mix until well combined.
  4. Fill each muffin tray with the mixture and cook in oven for approx. 15-18 mins until cooked.
