We made these fritters for our January meal plan over at www.mealsmadeeasy/recipes and they were a huge hit!

These fritters are a little different to the traditional versions, they are gluten, wheat, dairy free and a total wholefood option.  They’re even vegan friendly if that tickles your fancy.

These are amazing cooked in some ghee and olive oil, but you could use coconut oil too.

Ingredients

  • 1 large brown onion
  • 3 large corn cobs
  • 1 tbsp. coconut oil (approx.)
  • 1 tbsp. dried coriander
  • 140 g flaxmeal
  • 20 g psyllium husks
  • 2 pinches of salt
  • 1 c of water
  • extra coconut (or olive) oil for frying OR these could be done in an air-fryer

Instructions

Thermal Cooking Method

  1. Blitz onion only for 3 secs/speed 5. Scrape down sides.
  2. Cut kernels off the corn cobs and add these to your mixing jug
  3. Add coconut oil and cook for 3.5 mins/100ºC/speed 1/MC off.
  4. Add coriander, salt, flaxmeal and psyllium husks and mix for 10 secs/speed 3/reverse. Scrape down the sides.
  5. With the blades going on speed 3/reverse, slowly add one cup of water until the mixture is well combined.
  6. Next heat some oil in a frying pan and cook patty size fritters over med-high heat for approx. 3 mins on each side. Allow to cool on some paper towel.
  7. Serve alone or with tomato salsa, fresh garden salad and garlic aioli.

Traditional Cooking Method

  1. Dice onion and sauté off in frying pan with coconut oil.
  2. Cut kernels off the corn cob then add corn, sautéed onion, coriander, salt, flaxmeal, psyllium husks and water to a bowl and mix until well combined.
  3. Next heat some oil in a frying pan and cook patty size fritters over med-high heat for approx. 3 mins on each side. Allow to cool on some paper towel.
  4. Serve alone or with tomato salsa, fresh garden salad and garlic aioli.
